It's easy to knock the Chinese food served in American restaurants as being mostly inauthentic, but as Clarissa Wei askedhow can it be inauthentic if it's made by Chinese people for Chinese people and others? As people from different cultures travel and adapt to new places, their food naturally changes. When my dad came to the US from Bangkok, he couldn't find fresh, fat rice noodles in nearby stores, so he substituted lasagna noodles to make pad siew.
Pad thai is made with rehydrated dried rice noodles which are stir fried with eggs and chopped firm tofuflavored with tamarind pulpfish saucedried shrimpgarlic or shallotsred chili pepper and palm sugarand served with lime wedges and often chopped roasted peanuts. It may also contain fresh shrimpcrabsquidchicken or other animal proteins. Many of the ingredients are provided on the side as condimentssuch as the red chili pepper, lime wedges, roasted peanuts, bean sprouts, and other miscellaneous fresh vegetables. Stir fried rice noodles may have been introduced to Ayutthaya during the time of the Ayutthaya Kingdom by Chinese traders   and subsequently altered to reflect Thai flavor profiles.
